Wash all vegetables and squeeze water and allow to dry on cloth
Add these vegetables in a bowl and add salt, turmeric powder, red chilly powder, maida and check consistency of water as all vegetables release water
Now make balls from above mixture and deep fry them till golden brown
Transfer them into a tissue paper to absorb excess oil
Now prepare conflour slurry to thicken the prepared manchurian sauce(conflour, water)
Slurry must be running consistency
In a pan add oil after it is heated add ginger and garlic cloves and saute for a minute
Add curry leaves, onions and saute them now add capsicum and saute for 2 min
Add all water along with sauce and adjust it's consiatency by adding slurry
Add salt, red chilly powder and boil for a minute
Now add manchurian balls in sauce and saute for minute or two
Transfer to a serving plate and garnish with coriander
